Spring weather signifies the beginning of a period of informal entertaining that will carry me through the end of summer. This is the time when I finally dust the outdoor cushions and get ready for impromptu visitors, ready to partake in a great time.
This past Sunday, we watched The Masters and enjoyed every single minute of Phil Mickleson's magestic victory. To say that we are huge golf fans at our house, is to put it mildly. Any other sports event goes unnoticed at our place. Except for golf. Now, what this means in terms of food is that when a big golf tournament takes place, nothing (and I mean nothing) can take me away from the game.
As much as I love to entertain friends, there are times when I just want to sit down and watch the game. This was one of those times. It is my mantra that in order for a party to be fun for everyone, the host/hostess must have fun too. This time, in order to truly accomplish this, I made the food very easy on me. Everything was prepared ahead of time and I was ready for a party!
Remember that recipe for Feisty Chili that I gave you a couple of months ago? I made a huge batch beforehand. My menu this weekend consisted of delicious nachos (made with said chili), two easy pasta salads, one berry salad, and plenty of raw vegetables with hummus.
To make the nachos, I layered quality tortilla chips with plenty of hand shredded cheddar cheese, diced tomatoes and generous scoops of my chili. I baked them in the oven (at 400 degrees for 8-10 minutes)until they were warm and the cheese had melted and was bubbly. I made a very easy dipping sauce out of a few Haas avocados, mashed well and combined with sour cream, lime juice, and chopped chiles (not a guacamole, as you may have noticed, but the addition of sour cream prevents it from oxidizing at room temperature).
To drink, I offered micheladas (and I offer the recipe below for you to recreate them). Nothing came between me and my golf tournament and delicious fun was had by all.

Michelada
1 beer
1/4 cup lime juice, or to taste
Dash hot sauce
Dash Worcestershire sauce
Salt
In a tall, cold glass, pour the beer; stir in lime juice, hot sauce, Worcestershire sauce and salt. Drink immediately.
Yield: 1 michelada.
